Recipes: Salsa Three Ways


It's no secret, I love me a good salsa. Not only do my husband and I love making salsa together, but it helps us snack on something that is pretty healthy, and inexpensive. Just a few years ago, I would only like runny salsa, just dip my chip in a teeny tiny tad, and shake off any chunks. Wow, have my tastes changed.

Basically Amazing Salsa Recipe (Chiptole Chicken)

1/2 can well rinsed black beans
1 tomato, chopped
1/4 red onion, chopped
1 poblano pepper, chopped (or jalepeno if you like spicy)
handful fresh cilantro, chopped (we grow our own, it's super easy!)
2 garlic cloves, minced
1/2 T lemon juice
2 T olive oil (we usually skip this)
2 T vinegar (we usually skip this too)
salt to taste
Mix all, let stand together at room temp for approx 30 mins to let the flavors meld together. This salsa is really good with corn (like a pico de gallo) and cooked chicken chunks in a bit of Tabasco Chiptole sauce chunks added in. Top it on rice with a bit of shredded cheese and you've got your own Chipotle chicken.

Tangy Strawberry Salsa

1 medium onion, chopped
2 medium avacados, chopped (not smashed, this is not guacamole!!)
4 roma tomatoes, chopped
4 garlic cloves, minced
huge handful of fresh cilantro, chopped
8 strawberries, chopped
1 squeezed lemon
salt and pepper to taste

After chopping the tomato, avocado and onion, we put it in a pan on the stove and do a light stir frying for about a minute. It helps to add flavor just in case they aren't totally ripe just yet, and makes a nice warmth for serving on chips. Then we mix it all together in a bowl.



I know what you are thinking, "What, strawberries?" I'm telling you, it's awesome. If you ever over do it with onions and garlic (which we tend to do because we love both), tossing in some strawberries balances the flavor and adds something not too sweet and noticeable, but just enough as a 'secret ingredient'.

Grilled Steak with Avocado-Mango Salsa

For the salsa (serve over steak but also amazing with chips)
1 medium onion, chopped
2 medium avacados, chopped (not smashed, this is not guacamole!!)
4 roma tomatoes, chopped
4 garlic cloves, minced
huge handful of fresh cilantro, chopped
1 mango, chopped
1 jalapeno pepper, chopped
1 squeezed lime
1 c crumbled queso fresco (I didn't do this part, but if you do, it's super good).
salt and pepper to taste


For the steak:
4 boneless beef ribeye steaks, cut 3/4 inch thick (we used 2 super thin cut cheapo steaks).
2 tb olive oil
2 tsp minced garlic
1 tsp EACH of: coarse salt, pepper, oregano, ground cumin
1 cup Texas on the Plate Bodacious Soppin' Sauce or any marinade you like (I'm an A-1 gal).

1. Combine all steak ingredients in bowl and rub on both sides of steak and let sit for 15 mins.
2.  In the meantime, heat grill or charcoals. (we just did it on the stove).
3. Combine all salsa ingredients in a bowl and set aside at room temperature.
4. Grill steaks 6-9 mins per side for med-rare to med doneness. Baste generously after flipping if grilling.
5. Serve salsa, chutney style on steaks.

Sweet Treats: Valentine's Cupcakes

Today, I made cupcakes. Once again, I used the rainbow chip mix, and dyed my frosting with the gel food coloring. Gel coloring seems to be much brighter than the liquid ones.

The little scribbles are so cute and easy. Just melt chocolate, stir it ( food color it if you wish) and pour into a ziplock bag. Lay out a long strip of wax paper and snip a tiny hole in the corner of the bag. Pipe the chocolate into shapes on the wax paper and allow to dry. Before piping, you can draw shapes on paper and place the sheet under the wax paper so you can trace those shapes. After about 20 mins or so, carefully remove and place on frosted cupcakes, (this is why I made tons of extras, for all the ones that I broke while removing). Our family delivered some cupcakes to neighbors, friends and children I teach in Sunday school. But it got dark early and people weren't home, and we were getting hungry...

 ...so we grabbed pizza, went home, and gobbled cupcakes, along with these ginormously, beautiful strawberries the hubs brought home.

Aren't you loving our 5year old's, double black eye? He acquired it yesterday from jumping from our coffee table to the sofa and banged his pour little nose on the sofa arm. The same day, our 3 year old got a bead stuck up his nose. Oh the painful joys of childhood!

Oh, and my husband brought flowers too. These lovely purple ones, because he didn't want to be "too cliche'" and get roses.

Smoky Corn and Potato Chowder Recipe

I attempted my first ever crazy yummy tamale pie the other day, but when opening a can of corn, I accidentally opened a can of creamed corn. Yuck, how did it even get in my pantry?!

So, I thought, "Hmmm what do I DO with this?" Then, I brilliantly looked at the back of the can and there was a recipe for Smoky Corn and Potato Chowder (more Del Monte recipes here). I figured, "What the hey, I'll give it a try". Honestly, I had my reservations, so I added onions, salt/pepper and used fresh potatoes instead of canned.


It is probably one of the best things I made in a long time, plus it's easy and most ingredients you probably have on hand. Even my kids gobbled it up. Really, it's perfect for the chilly weather, since it's a nice, warm, flavorful, hearty bowl of soup with a perfect blend of texture. Next time I make it, I'm doubling the batch. I wonder how well it will freeze?

♥ Ingredients ♥ 
-1 1/2 c milk
-1 can Del Monte Cream Style Golden Sweet Corn
-1 can Del Monte Whole Kernel Sweet Corn, drained
-1 c smoked sausage, halved and thinly sliced (or cubed cooked ham)
-1/2 small onion, chopped (about the size of a corn kernel)
-7 peeled, coarsely chopped potatoes, boiled until tender and drained
(or 1 can Del Monte Whole New Potatoes)
-salt and pepper to taste (white pepper if you want to avoid black flakes)
-1 1/2 c shredded smoked cheddar (or swiss or gouda cheese)
-chopped chives or green onion slivers for garnish

♥ Directions ♥

1. lightly sear sausage in large, sprayed saucepan
2. stir in milk, and cream corn
3. add whole kernel corn, onion and potatoes
4. heat through, stirring occasionally, add salt and pepper.
5. stir in cheese until melted
6. garnish with green onion slivers or chives and serve (I didn't have these, so used Mrs. Dash or something)

Easy Tomato Soup Recipe


It' been a little stormy here, and in weather like that, I love tomato soup. I have a few fancy and delicious  recipes that require a bit of work, but a nice simple recipe is always good too (especially when you need to go to the store and are out of all fresh ingredients!)

1 can Campell's Tomato Soup
1 TB butter
1 1/2 c water (or milk or heavy whipping cream for creaminess)
dried basil (use fresh if you have it)
garlic powder
onion powder
salt and pepper to taste

Serve with crackers and shredded cheese. A toasty grilled cheese sandwich and pickles make a perfect side.
How do you make your soup? Sour cream and chives? Crumbled crackers? Homemade from scratch? Do you like it smooth, or prefer it with lots of texture?

Sweet Treats: Edible Painted Marshmallows and Popcorn Activity


Amy of Living Locurto's edible paint project is adorable! She got the idea from Katherine's amazing drive in movie and popcorn themed party. Katherine used sweet evaporated milk with food coloring, and  Amy used regular milk with food coloring.


We have been loving both popcorn and marshmallows lately, ( put them together to make popcorn balls) and so I'm confident that my boys will just love this little activity.Wouldn't those marshmallows be cute in little s'mores?

Recipe: Vegetable Pork Chop Dinner



This is one of the tastiest and easiest dinners I have made in a while. I just went grocery shopping the night before, but wanted to use up the older veggies before they went bad to make room for the new ones. 

So, I typed into google, 'pork chops' and 'red bell pepper', found  this recipe and thought, wow, that's really easy! I added  mushrooms and altered the sauce a bit and it was perfection. The onions were easy, because I just pulled prechopped ones I had in a freezer bag already to go. We served the meal over steamed rice and had (store bought) strawberry shortcakes with fresh chopped strawberries and whipped cream for dessert.

You could substitute green beans or asparagus for the bell peppers in this easy and delicious recipe.

♥ Ingredients ♥
  • 4 (3/4 inch) thick boneless pork loin chops
  • salt and pepper to taste
  • 2 Tbsp. olive oil
  • 1/4 onion, chopped
  • 2 cloves garlic, minced
  • 1/2 red bell pepper, seeded and cut into strips
  • 6 mushrooms, sliced thick
  • 3 tablespoons Worcestershire sauce
  • 1/2 cup water or chicken broth
  • 3 tablespoons Girard's Caesar Dressing (optional)
  • 1/2 tsp. dried thyme leaves (I used Emeril's table blend instead)
  • 1/2 tsp flour or cornstarch to thicken sauce

♥ Preparation ♥

Sprinkle chops on both sides with salt and pepper. Heat olive oil in heavy skillet over medium high heat and add chops, onion, and garlic. Cook 5 minutes on one side, shaking pan frequently so garlic doesn't burn, then turn chops and add pepper strips and mushrooms. Cover and cook 5-8 minutes longer until pork registers 160 degrees F. Remove chops and peppers from skillet and set aside, covered to keep warm. 

Add Worcestershire sauce, water, dressing, seasonings and flour, scraping bottom of skillet with rubber spatula to loosen pan drippings. Cook until sauce thickens slightly, then return pork and vegetables to skillet. Cook for 1 minute longer to coat pork with sauce, then serve. 4 servings.

Herb Crusted Pork Chops Recipe


My new favorite recipe. I combined a few ideas until I came up with my perfect combination. It's great for picky eaters and quick and easy. You can also use chicken instead of pork, and it will be awesome, but the crust is a little more juicy from cooking. Amazingly, it isn't as pink, dry and burnt up looking as my photo suggests! Serve with potatoes*, greens beans, garlic bread*, salad or fresh fruit for a well rounded meal.

♥ Ingredients ♥

4 boneless porkchops
2 cups Progresso Italian Style bread crumbs
1 packet Lipton Onion Soup/Dip mix
1 c Girard's Light Caesar Salad dressing (this dressing works best)
1/3 c French's Spicy Brown Mustard (any Dijon will do)

1. Preheat oven to 375
2. Mix caesar dressing and brown mustard in a bowl.
3. In a seperate bowl, mix bread cups and dry onion soup mix. 
4. Coat pork chops in dressing mix, put in ziplock bag and marinate in fridge for up to 2 hours. Or don't marinate, (I never do) either way, it will be good.
5. Coat the dressing covered pork chops in the bread crumb mix. Place pork chops in baking sish, cover with foil and bake for approx 25 mins or until done.


♥ Garlic Rosemary Roasted Potatoes ♥

Our favorite side potatoes, made famous by my mother in law. They are great unpeeled, or peeled.

Cut into 2 chunks. Put in roasting pan and toss in olive oil, salt, pepper, rosemary, lots of garlic and basil. Cover with foil and bake at 375 for about 40 minutes, stirring occasionally.



♥ Garlic Bread ♥

Soften about 2 cups butter (I use Smart Choice). Add fresh chopped basil and freshly minced garlic to butter and mix. Cut a store bought french bread loaf and butter insides with garlic butter. Place on pan and bake for about 6 minutes.

Cut into slices and fight over the last piece.
