Upside Down Pizza Recipe


Upside down pizza. I remember my mom making a Pampered Chef Pizza in a Jar recipe that was delish. So when I found this recipe in a Family Fun magazine this week, I HAD to try it. I made a few changes to the  recipe, added more veggies like the zucchini, more onions... I'll write my changes below, and the original in ( ):

* 2 tablespoons olive oil
* 1 cup chopped onion
* 1 cup chopped mushrooms
* 1 large zucchini cut in 1/2 inch chunks
* 4 cloves garlic, minced
* 1 lbs shredded chicken, I used leftovers (or 2 lbs ground turkey)
* 1 jar pizza sauce, 1 small can tomato paste ( or 2 (15-ounce) cans Italian-style tomato sauce)
* 1/2 c fresh basil, chopped (or 2 teaspoons dried basil)
* 1 cup mini pepperoni or chopped pepperoni
* 1 teaspoon pepper
* 3 cups shredded mozzarella cheese
* 1 (13.8-ounce) package prepared corn bread mix (or prepared pizza dough mix)



Instructions

1. Heat the oven to 400°. In a large skillet, heat the oil over medium-high heat. Add the onion, mushrooms, and garlic and cook, stirring frequently, until the onions begin to soften, about 3 minutes. Add the turkey and continue to cook and stir, breaking the meat into small pieces, until it is no longer pink, about 8 minutes.

2. Stir in the tomato sauce, basil, and pepperoni and cook until heated through, about 5 minutes. Add the pepper, then transfer the mixture to a 9- by 13-inch casserole dish.

3. Scatter the cheese on top and layer on the pizza dough. Bake the casserole until the dough is golden, about 20 minutes. To serve, spoon out portions with a large serving utensil.

Yes, I left it in the oven a little bit too long, but it was still so. good.  If you make it, I'd love to hear your changes or if you liked it!

Sweet Treats: Strawberry Banana Streusel Muffins with Strawberry Butter



This is a compilation of about 3 different recipes. This strawberry muffins one (with user suggestions taken into account), and this cran-orange streusel and my banana one. Every recipe I ran into needing strawberries called for lemon or orange zest, and I am fresh out of both (though I do use a tad of lemon juice). So, why not use something else? Because I bought 4 huge packs of strawberries and need to use them before they go yucky.



Muffins:
2 mushy bananas (well mashed)
1/2 c milk
1 egg
1/4 c brown sugar
1/2 tsp salt
1 1/2 c flour
1 squirt lemon juice (optional)
1/2 tsp vanilla
1/2 tsp cinnamon
1 1/2 c chopped strawberries

  1. Preheat oven to 375 degrees F (190 degrees C) oil an 8 cup muffin tin, or use paper liners.
  2. In a small bowl, combine oil, milk, lemon juice, bananas and egg. Beat lightly. In a large bowl, mix flour, salt, baking powder and sugar. Toss in chopped strawberries and stir to coat with flour. Pour in milk mixture and stir together.
  3. Fill muffin cups. Top with streusel topping, then lightly sprinkle with sugar.
  4. Bake at 375 degrees F (190 degrees C) for 25 minutes, or until the tops bounce back from the touch. Cool 10 minutes and remove from pans.Serve with Strawberry butter.

Streusel Topping:
2 TB flour
2 TB brown sugar
1/4 tsp cinnamon
2 TB cold butter
2 TB sugar (to sprinkle on afterwards)

* Combine all (except white sugar) in small bowl. Cut in butter until crumbly. Sprinkle over batter. Sprinkle white sugar on top.


Strawberry Butter:
3 large strawberries
2 tsp confectioner sugar
stick room temp butter

*Blend and drizzle on muffins. Or maybe you just blend the strawberries and then lightly mix it in the butter for a thicker consistency. I don't know, directions were unclear, so play around with it. It looks disgusting, but I promise you it is not. If you use an awesome food processor unlike my old smoothie half-working blender, it will probably look better.

Sweet Treats; Baked Oatmeal Recipe


This recipe is so easy, fast and delicious! I've made this baked oatmeal before with peanut butter, but my family didn't like it too much, I think I added way too much salt (so my fault). But this was perfect... even for the pickiest eaters. I just topped mine with drizzled honey and chopped fresh strawberries. Serve it with bacon for a yummy breakfast.

Ingredients:
 3 c quick cooking oatmeal
1/2 c sugar
1/2 c packed brown sugar
1 tsp salt
1/2 tsp baking powder
1 c milk
1/2 c vegetable oil
2 eggs
1 tsp vanilla
1/2 tsp cinnamon


Topping Ideas:
fruit~ strawberries, blackberries, raspberries, blueberries, raisins)
drizzled honey
chopped fresh mint (optional garnish)
yogurt, maple syrup and raisins
warm milk with sliced banannas
whipped cream and chocolate chips



Preheat oven to 350 degrees. Combine all ingredients in a large bowl. Pour into a greased 9x9x2 baking dish. Bake, uncovered, at 350 for 30-40 mins or until set and edges are lightly browned. (My oven runs hot, so it only took about 26 minutes).

Easy Tomato Soup Recipe


It' been a little stormy here, and in weather like that, I love tomato soup. I have a few fancy and delicious  recipes that require a bit of work, but a nice simple recipe is always good too (especially when you need to go to the store and are out of all fresh ingredients!)

1 can Campell's Tomato Soup
1 TB butter
1 1/2 c water (or milk or heavy whipping cream for creaminess)
dried basil (use fresh if you have it)
garlic powder
onion powder
salt and pepper to taste

Serve with crackers and shredded cheese. A toasty grilled cheese sandwich and pickles make a perfect side.
How do you make your soup? Sour cream and chives? Crumbled crackers? Homemade from scratch? Do you like it smooth, or prefer it with lots of texture?

Sweet Treats: Fruity Puff Pancake


This puff pancake family favorite recipe comes from my mother in law. She is an excellent cook and this dessert can be enhanced any number of ways. It is a family tradition to eat this treat during family get togethers, though it's especially perfect during the summer time. Keep in mind, the recipe is temperamental based upon altitude and humidity, so some experimentation may be needed. If you prefer something baking and hassle free, try my graham cracker with fruit and icing treat.


You bake your dessert base, which is a mix between a pan cake and a custard. The sides will brown, expand and curl over the pan edge and the cake will rise all puffy like while baking.


 When you pull it out of the oven, the cake will fall a little, so serve immediately while still warm. Cut the cake into slices and place on individual plates.


This is the part where each person experiments. Top the cake with a dollop of sour cream, (or plain yogurt which is healthier), then any freshly washed, cut up fruit you like. Here, we used strawberries, raspberries, blueberries and bananas. Then, sprinkle the fruit with brown sugar. If you like whipped cream or chopped fresh mint, those are good as well. Kiwi, blackberries, peaches and even chopped apple are good too. It seems the one fruit we always use is strawberries though, then whatever else we have, we chop up and add it on top.

Herb Crusted Salmon and Asparagus Recipe


This is our dinner. I'm not a big fish person, and when I do make it, dill and lemon juice are usually involved... and I was just not in the mood for that.

So, using this recipe as inspiration, I came up with my own ingredients list since I didn't have half of what was called for. I found this site on substituting for teriyaki sauce and the A1, oj and Worcestershire turned out even better than teriyaki. And, even though we have gourmet Parmesan cheese given to us by a cheese scientist, I forgot to add it!

♥ Herb Crusted Salmon Steak ♥

1/2 cup Parmesan cheese
1 egg
1 cup Italian seasoned bread crumbs
1 teaspoon basil
1/4 c water
1/2 cup pulp free orange juice
1/2 cup A-1 steak sauce
1 tablespoon Worcestershire sauce
1 tablespoon butter
1/4 cup chopped red onion
1 tablespoon minced garlic
2 pounds salmon steaks

1. In a shallow, medium bowl mix Parmesan cheese, Italian seasoned bread crumbs, spices.
2. In a medium saucepan over medium heat, blend A1, orange juice, butter, red onion and garlic. Cook and stir until onions are tender.

3. Press one side of each salmon steak egg and dredge into the Parmesan cheese mixture. Place steaks crust side up in saucepan with sauce mixture. Cook over medium high heat until most of the liquid is reduced, 10 to 15 minutes, then flip with a spatula. Continue cooking until crust is golden brown and fish is easily flaked with a fork.
♥ Asparagus ♥
 
I usually blanch* asparagus first, to maintain the nutrients and green color, and to stop it from turning mushy during cooking, but I didn't this time, though I would usually suggest it.
 
1 lb fresh asparagus spears
1 tb oilve oil
1-2 cloves crushed garlic
1tb butter (we use smart balance)
salt/pepper to taste
1 tb seseame seeds
 
1. Cut off woody ends
2. Cut asparagus into 1 1/2 inch pieces
3. Heat oil in saucepan over medium heat. Add asparagus, garlic, salt and pepper. Cook on med heat, stirring frequently about 5 mins. Add butter and seseame seeds, cook until done.
 
*to blanch first:
Have a large bowl of ice water ready to go.

Boil a large pot of water. Now, place your asparagus into the boiling water. Cook until the asparagus turns a bright green. The time this will take will depend on how thick your asparagus stalks are. Usually takes about 2-5 minutes.
Remove asparagus from the pot with a slotted spoon or tongs and place into ice-water bath to stop the cooking process. This will tenderize the stalks a bit more, but they'll remain deliciously crunchy.

We served it with steamed rice with a touch of salt and pepper and butter and naan bread (we love our starches around here) and it was delicious... even for people who don't like fish, like me, I even ate more than 1 serving!

Sweet Treats: Have a Cupcake while I'm UNDER CONSTRUCTION


This blog is having a little make-over, so please pardon the mess!! Instead, have a cupcake, heaven knows I NEED one with this massive headache.

Maybe I will attempt Billy's buttercream frosting recipe from Martha Stewart.

But for now, nerves are shot, the dog won't stop barking, the boys won't stop screaming/hitting/breaking things/staying off the 3rd floor patio and all I really need is a cupcake. Though it won't make much change, it will transport me a into sugary dreamland where clouds are whipped frosting and it rains sprinkles.

I think it's nap time.
